Here's a good moist cake that stays fresh for days.


1/8 lb. butter
1 tsp. baking soda
1 c. flour
1 c. brown sugar
1 tsp. ground cinnamon
6 ground cardamom seeds
1/2 tsp. ground cloves
1 egg
1/2 c. sour cream
1/2 c. lingonberry jam

Set oven to 325. Butter 9x5x3 baking pan and sprinkle with fine bread crumbls. Melt butter and set aside to cool. Dissolve soda in 1 tsp. tepid water. Mix all dry ingredients together in a bowl. Whip egg slightly and combine with sour cream and dissolved soda. Add to dry mixture and stir well until smooth. Add cooled melted butter and lingonberry jam. Pour into pan and bake 60 min. Cool on a rack.

No, it's a Swedish cake. I have several other similar recipes. Here's another Swedish cake:


1 egg
1 1/2 c. sugar
1 tsp. cinnamon
1/2 tsp. cloves
6 ground cardamom seeds
1 1/2 c. flour
1/2 tsp. baking soda
3/4 c. milk
2 tbsp. melted butter

Beat egg slightly; add sugar and spices. Sift flour with soda and add alternately with milk. Last of all add melted butter. Butter a pan and sprinkle with bread crumbs to coat the butter. Pour in batter and bake 375 50 min.
