Ninni,

The recipe isn't very different from Swedish pancakes, except Americans like them thicker and fluffier.

Pancakes

1 1/4 c. all-purpose flour
3 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
1 beaten egg
1 cup milk
2 tablespoons salad (cooking) oil

Combine first 4 ingredients. Combine egg and milk and oil. Add to dry ingredients, stirring quickly until ingredients are moistened - batter may be lumpy. If too thick, add a little more milk. Dip about 1/4 cup batter onto a hot griddle. Turn pancakes when brown and cook on other side. Makes about 8 4-inch pancakes or 12 small pancakes. Serve warm with butter and syrup. Can add blueberries to batter.
