I love this because it is so Finnish and more importantly it is soooo quick to make!

2 packets 450g ready rolled shortcrust pastry (or your own if you prefer)
300g/ 10oz approx blueberries, rinsed and patted dry. I use much more than this though :))
55g/2oz light soft brown suger
1 tablespoon plain flour
1/2 teaspoon ground cinnamon
1 teaspoon lemon juice
1 egg white, beaten
25g /1oz flaked almonds, roughly chopped (optional)
icing sugar to decorate
vanilla ice cream or custard to serve (optional)

1. Preheat oven to 200 degrees C/ fan 180degrees C/ Gas mark 6.
Combine blueberried, brown suger, flour, cinnamon, lemon juice in a bowl and mix well.

2. Whisk egg white in a small bowl until light and frothy. Unroll one round of pastry onto your round stone/whatever you use and brush with the egg white. this will help prevent it from getting soggy. Spoon the blueberry mixture evenly over the pastry leaving a 4cm border all around the edge.
Unroll the second round and cut strips of about 6cm in length and about 4.5cm apart.

3. Arrange this strips on the pie in a sort of lattice style or however you choose. Using your thumb and forefingers you can press the edges and make some decorative patterns if you wish. Brush egg white over the surface of the pastry. Sprinkle the almonds on top if you wish.

4. Bake for 25-30 minutes until golden brown. Allow to cool. Sprinkle with sifted icing sugar, cut into wedges, serve with ice cream or custard then EAT! :))
