5-6 lbs. lutfisk and 1 1/2 tablespoons salt

Set pieces of fish on aluminum foil or parchment paper and sprinkle with salt. Wrap tightly. Place in ceramic or enamel baking pan.
Bake 400 F (220 C) 40-50 minutes, depending on amount of fish.
Discard liquid that collects in the packet.

Serve with boiled potatoes and white sauce, seasoned with allspice or white pepper and salt.

White Sauce:
5 tablespoons margarine
3/4 c. white flour
6 c. milk
salt to taste

Melt margarine in saucepan; add flour and stir until smooth. Add milk gradually, while stirring, and allow to boil gently for about 5-10 minutes.
Season with salt and white pepper, or ground allspice.

Boiled Lutfisk

4-6 cups water and 1 1/2 tablespoons salt

Bring water to boil and add fish. Fish will retain shape if tied up in cheesecloth. Boil for 20 minutes. Pour off liquid and serve with white sauce. Do not cook lutfisk in an aluminum pan because the fish corrodes aluminum.
