12 oz. can pork-ham luncheon meat, sliced (Spam)
flour and oil
1/2 c. chopped onion
1 lg. eggplant, peeled and sliced 3/4" thick
1 egg beaten with 1 tbsp water
16 oz. can stewed tomatoes
6 oz. tomato sauce
1/2 tsp. each: garlic salt, basil and sugar
1/4 tsp. pepper
1 c. shredded mozzarella cheese

Coat meat with flour and brown in 2 tbsp. hot oil in skillet. Remove meat and dice. Saute onion in drippings until tender; remove. Dip eggplant in egg, then coat with flour. Add 2 tbsp. more oil to skillet and brown eggplant. Remove and cut in cubes; return it to skillet with meat, onion, tomatoes, tomato sauce and rest of ingredients, except cheese. Mix well and pour into greased 8-inch square casserole. Bake 375 45 minutes until bubbly. Sprinkle with cheese and return to oven to melt. Serves 6. A tasty way to serve Spam and it doesn't taste like Spam.
