1 c. cooked rice (white or brown)
2 c. milk
5 med. carrots, shredded
1 tsp. salt
1 tbsp. dark brown sugar
2 eggs
1/2 tsp. allspice or nutmeg
1/2 c. apple, grated (optional)
1 tbsp. grated lemon zest (optional)
3 tbsp. butter
1/3 c. fine bread crumbs

Combine the rice, milk, carrots, salt, sugar, allspice and eggs. Stir in apple and lemon zest if desired. Pour into a well-buttered 1 1/2-quart casserole. Melt the butter in a separate pan and stir the crumbs into it. Sprinkle them over the top of casserole. Bake 375 F about 40 minutes, until the top is lightly browned. Serves 6. This is a traditional Christmas dish in Finland.
