Släpärter.

End of July, beginning of August is the time for another Finnish delicacy: släpärter. Släpärter, or field peas (Pisum Sativum) are difficult to find in the Helsinki market place, expensive, but delicious. Calculate ½ Lbs. per person. In a big saucepan, heat 1,5 quarts of lightly salted water to boiling. Add the peas and simmer for 10-15 minutes. Melt some butter and serve in a small cup.

Serve the peas from the saucepan. Place a shot glass on each plate.

Fill your shot glass with some of the nectar from the saucepan; add a tsp. of melted butter and start eating. Grab a pea pod between your thumb and forefinger, dip in the shot glass and carefully pull the pea pod between you fore teeth. When you acquire skills, you will be able to scrape off the soft tissues from the harder shells without extracting the shell. Some of the peas will accumulate in the shot glass. When it’s full, drink it.
